Japati

1. use Wheat unbleached flour
2. In a large bowl, place the flour, two eggs, and one or two spoonful of sugar
3. Use enough flour to make dough to fit roughly in the palm of your hands. I always make more than I need as you can put the dough in the fridge and cut some off when you need.
4. Pour in some water and mix with your hands
5. keep adding olive oil until you have a nice pliable dough, not too sticky not too dry.
6. Cut up dough and roll out japati to what ever size you want
7. In a non stick pan, cook japati on each side until golden brown.
8. Then if you have gas, hold japati with two pairs of tongs and heat over the naked flame... this will puff the japati and give it a wonderful chargrilled taste.
